When I was in town, last week, I was talked into going to ShaWINGz by Earbyte (an EverythingKMC site member and friend).

I was a bit leery of trying the place since I had tried on previous trips to Kaiserslautern and found them closed with a note on their door telling me about how their inventory control sucks and they ran out of food (not in those exact words).

Having said that, we ordered 25 wings. Some with garlic buffalo, and some with cheddar bacon ranch (I think). I ate the garlic buffalo, and tried some of the others which were ordered by Earbyte.

I have to give kudos to ShaWINGz. For as poorly as they did in the beginning, it would appear that they have really pulled it together. The wings were delicious. I only wish they had allowed me to order more than two sauces. They have some kind of rule that only allows them to serve two types of sauces with an order. I was quite impressed. The wings were cooked well, the sauce was very tasty, and the food was served pretty quickly.

The staff is friendly, as well. It looks like they took a play from the Moe's Southwest Grill playbook. When you walk into Moe's, the staff yells "welcome to Moe's!" When you walk into ShaWINGz, they staff yells "welcome to ShaWINGz!" Not original, but still friendly, regardless.

The only real downside to my meal was the fries. The basket of food we received was setup so there were wings to the left of a pile of fries, and wings to the right of the pile of fries. The fries were soggy. I am not a fan of soggy fries. Having said that, I did not go to ShaWINGz for the fries. Their main event is their wings, and they did those very well.

I look forward to my next visit to Kaiserslautern, and my next visit to ShaWINGz.

One question: Why does ShaWINGz appear to be located in Paris?

Yup - very funny. Nobody knows why they do anything that they do. Running out of food in some US locations is considered a badge of great food. "You gotta get there before they run out!"

As someone who has several family members in the restaurant business (for over 50 years), I can tell you that if anyone ever ran out of food, it would be their job. No questions asked. You simply don't run out of the product that feeds your family.

Even with that, the food that I had, fries aside, was very tasty. I have to give them credit where credit is due.

True, but there are plenty of places featured on the food network that come with warnings that say "get here by....or the food is gone." Holeman and Finch Public House comes to mind. They make 24 burgers a night after 1100PM or something like that. Once gone...that's it.

Running out of food is a double edge sword. On one side it keeps fresh ingredients flowing opposed to them sitting in a pantry or walk -in for weeks and weeks but at the same time once you're out you stop making money and possibly pissing of people. Then again running out of food makes your food the "great white whale" and people will go out of their way to get it. Not saying this about ShaWINGs as in my opinion they are about average.

I understand the "get here by... or the foood is gone" for established restaurants who have Michelin stars, or restaurants who have critics swooning over them. Not so much for a chicken wing joint in Landstuhl.

Having good inventory control is crucial. My brother could tell you, on any given day, exactly how much fresh food would be ordered. He had historical data (which is not yet available for ShaWINGz).

Since ShaWINGz is focusing on just one food item, they really do need to get their ordering process down to a science. They should be able to figure out exactly what to order, when to order, and how much to order, to keep it fresh and not frozen.

I would go back the next time I am in town. I enjoyed my food.

LOL - have you ever been to a Michelin star restaurant? Those are not get there by XXXXX type's reserve weeks, if not months in advance and then be ready to leave not only lighter in your pocket but still hungry.
