1 cup all-purpose flour
1/2 cup brown sugar
2 cups granulated sugar
1/2 tsp. cinnamon
1/2 cup butter
1/2 cup chopped pecans
1/2 cup sourdough starter
1 can water-packed cherries

- Pour cherries into Dutch oven, or iron skillet, add 1 1/2 cups of the sugar, along with
1/4 cup flour. Mix well and cook over live coals, or medium-high heat, until the cherry
juice becomes thick and the cherries are hot. Set the skillet aside for a few minutes
while making the remainder of the ingredients.
- Combine the remainder of the flour, sugars, and cinnamon, and cut in the butter.
Stir in the pecans and the sourdough starter. Spoon this mixture over the cherries and
place the skillet back on the coals or burner. If using a Dutch oven, place the lid on and
cover the lid with coals and let bake.
- After the top of the cobbler begins to brown slightly, lift the lid and, with a sharp knife,
cut a few holes in the top. This will permit the cherry juices to bubble up enough to make
the cobbler much more attractive. After the top has reached a golden brown, sprinkle
about 2 more Tbsp. of sugar over the top and place the lid back on for 1 min., then remove.
It's ready.
